This coffee is fermented at Finca Idealista because the fermentation without oxygen, requiring frequent pH readings, is delicate and risky. After whole cherries are fermented in a barrel both without and with water, the whole cherries are put out to dry in the sun for just over one month.
Maritza can be seen washing coffee in a large washing channel, and Francisco takes pride in carrying sacks to be depulped and fermented. They enthusiastically show visitors their coffee and farms and take great pride in their work.
