These limited offerings showcase unique processing methods, rare varietals, and flavor profiles that transcend traditional coffee experiences.

Cherry Syrup

Origin: Nicaragua, Jinotega
Variety: Red Pacamara
Process: Carbonic Maceration Natural

Description:
Crafted at Finca Idealista, Cherry Syrup is the result of years of experimentation and relentless pursuit of perfection. Implementing carbonic maceration—a fermentation technique borrowed from fine winemaking—required not just technical expertise but also the acquisition of specialized equipment like air traps and pH meters. The farm's dedication led to collaborations with international producers, exchanging knowledge to push the boundaries of coffee fermentation.

The result? A coffee so extraordinary it challenges the very definition of what coffee can be. It delivers an experience akin to sipping a signature cocktail at an upscale tropical bar.

Tasting Notes:
Intense flavors of peach, cherry lollipop, and papaya, fueled by the high sugar content of the Pacamara beans. It's vibrant, juicy, and unapologetically bold—the reason we call it Cherry Syrup.


Spill the Tea

Origin: Nicaragua, Matagalpa/Jinotega Border
Variety: Geisha
Process: Washed

Description:
Spill the Tea hails from the heart of Finca Idealista, a farm redefining sustainability in coffee cultivation. Here, machetes replace herbicides, natural fungi combat pests, and volcanic filters protect the watershed from coffee processing runoff. Even the compost is enriched naturally, thanks to chickens roosting above it, infusing it with nitrogen. The farm's ethical practices extend to people too—with pickers earning double the local wage.

Producing Geisha here is an act of devotion. The yield is so minimal that it defies economic logic, but the result is pure magic: delicate, floral, and unforgettable.

Tasting Notes:
Ethereal notes of jasmine, tea, and lilac dance through the cup, delivering an elegant, refined experience that inspired the name Spill the Tea.


Dream POD

Origin: Nicaragua, Jinotega
Variety: Red & Yellow Caturra, Red Ratuai Bourbon
Process: Carbonic Maceration Natural

Description:
Fermented at Finca Idealista, Dream POD undergoes a meticulous carbonic maceration process. This delicate method involves fermenting whole cherries in barrels, both with and without water, under anaerobic conditions. Constant pH monitoring ensures the perfect environment for flavor development. After fermentation, the cherries bask in the sun for just over a month, slowly drying to perfection.

Maritza and Francisco, stewards of this exceptional coffee, embody the spirit of Dream POD with their hands-on care—from washing and depulping to proudly showcasing their farm's rich heritage.

A luxurious fusion of rum, cherry, and prosecco notes creates a cup that's both indulgent and effervescent, like a celebratory toast to the art of coffee.
